Happy Monday! Yesterday I had a blast throwing a Little Pumpkin baby shower for Mama Tex. Several people asked for recipes from the food table, so I thought I would share them for Monday’s Mouthful.
Since the shower was on the small side, my co-host and I were able to make all the food ourselves. One new recipe that I tried for the shower was a fluffy Pumpkin Pie dip from Easy Baked that I found via Pinterest. Click here for the recipe. It was delicious!
The author of the recipe includes instructions for making pie crust pieces from refrigerated pie crusts for dipping; instead of cutting into squares, I used a pumpkin-shaped cookie cutter to cut out my pieces. I followed the directions in the recipe, but only needed half the cooking time. In addition to the pie crusts, we served green apples and grapes for dipping. *Tip: I sliced the apples a few hours before the party and was worried about them turning brown before serving. I was afraid dousing them in lemon juice would make them too sour, so a quick Google search yielded the suggestion of soaking the apples in apple juice to prevent browning, and it worked! I just kept them in an apple juice bath until I put them on the plate, and they stayed nice and white. The leftovers in my fridge are still white today!
I made little “food tents” to label our party dishes using blank thank-you cards left over from our wedding (seven years ago), plain blue cardstock, and heart-shaped brads for accents. All of these items were already in my scrapbooking stash!
Another yummy concoction was Pumpkin Whoopie Pies with Fluffy Nutella Buttercream filling. The whoopie pies were really easy since they were based on a cake mix, and were super moist and light. I found the recipe here on Food.com. You may recognize the Nutella Buttercream filling from a previous post; go here for the recipe. These were my personal favorite…I’m eating one right now!
Another Pinterest find that I have made several times in the past was Hot Corn Dip by Our Best Bites. Find the recipe here. I don’t have a photo of this one, but trust me…it’s tasty! I make it to take to family gatherings or potluck-style functions, and it would be amazing for tailgating.
I have one more sweet treat to share, but you’ll have to wait for the next post because it deserves its own tutorial 😉
